The Ethiopian spice blend, Za'atar is a tasty mix with some distinctive flavours. Sesame seeds are roasted to bring out the flavour, then left whole in the mix. Sumac, which is a principal ingredient, has a tangy, zesty flavour that complements the herbs of Thyme, Oregano and Sage. The addition of a small amount of Aniseed and Fennel Seeds is just enough to set it apart from other spice mixes.
The mix is commonly used as a dip - added to olive oil and drizzled over flat breads, pittas and other breads. It could equally be used as a delicious salad dressing or sprinkled over hummus, eggs or a feta cheese. It makes a great rub on meat for the barbecue, and is perfect for the veggie/vegan option brushed over aubergine to be roasted. Experiment and you will see how versatile - and tasty - this spice blend really is.
