'Top of the Shop' is the literal translation of Ras el Hanout, so called because of it's importance in Arabic cuisine.  It can sometimes have as many as 50 or more different spices in it as spice dealers mix the best of what they have on offer.

This blend of 21 spices, has a wonderful hit of Star Anise when you first savour it, but is soon followed by a cacophony of flavours shouting back at you.  It is an essential spice mix throughout North Africa.  The souks of Morocco, Tunisia and Algeria are a riot of colour as the many different spices are displayed in all their splendour.

It goes with everything!  Carnivores, vegetarians and vegans alike will want to cook with this spice.  Tagines, stews, soups, bbqs, breakfasts, suppers, salads - there are countless recipes out there to be had, but experiment, use  little, use a lot and find out what your favourites are - and come back and share it with us!
