There are many different recipes for this delicious Middle Eastern spice blend - often having eight or more spices! The range of different spices varies too - some have cardamom, paprika, cumin, coriander or other spices. Families, regions, restaurants, all develop there own blend - so at the end of the day it is all about personal preference.
I decided to stick to seven spices and have gone with equal amounts of each spice - this makes for an exciting mix just bursting with flavour! It makes a wonderful coating or rub for chicken of other meats, is magnificent in meatballs, and as an all round general seasoning it takes some beating! It is great in soups, stews and casseroles and goes perfectly in vegetarian creations.
I find an almost earthiness to the flavour which I really love - try it and let me know what you think!
