Jerk chicken, rice and peas with some fried plantain on the side - a feast of a meal.  The Allspice and chillies combine to give a richness and warmth that is delicious.  Jerk refers to the style of cooking - slitting the meat and seasoning it with spices. 

You can use this powder dry, straight on the meat, or mixed with some soy sauce and lime juice to make a marinade.  As with any marinade, the longer you leave it the more the food absorbs the flavour and the more and more tender the meat becomes, so if you can prepare it the day before, all the better.
